Beef steak and couscous star in this delicious summer salad.
The ingredient of Beef Couscous Salad
- 2 about 250g each 2 5cm thick beef sirloin steaks new york cut
- freshly ground black pepper
- 2 teaspoons olive oil
- 250ml 1 cup water
- 1 lemon rind finely grated juiced
- 260g 11 3 cups couscous
- 250g 1 punnet cherry tomatoes halved
- 2 lebanese cucumbers thinly sliced lengthways
- 100g baby spinach leaves washed dried
- 16 about 70g kalamata olives
- 1 garlic clove crushed
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- salt freshly ground black pepper
- 2 tablespoons olive oil
The Instruction of beef couscous salad
- season both sides of steaks with pepper heat oil in a medium heavy based frying pan over medium high heat add steaks and cook for 3 4 minutes each side for medium or until cooked to your liking place on a plate cover loosely with foil and set aside for 10 minutes to rest
- meanwhile combine water lemon rind and lemon juice in a medium saucepan cover and bring to the boil over high heat remove from the heat and use a fork to stir in couscous cover and set aside for 5 minutes or until all the liquid is absorbed use the fork to separate grains
- to make the dressing combine the garlic vinegar and honey in a small bowl taste and season with salt and pepper gradually whisk in the oil until the dressing thickens
- cut the steaks across the grain into 1cm thick slices and place in a large bowl add the couscous mixture tomatoes cucumbers spinach and olives add half the dressing and toss gently to combine
- spoon onto plates drizzle with the remaining dressing and serve
