The ingredient of Steak Fajitas
- 550g coles scotch fillet steaks cut into thin strips
- 30g packet taco seasoning
- 1 garlic clove crushed
- 2 tablespoons olive oil
- 1 red onion thinly sliced
- 1 yellow capsicum or red capsicum seeded thinly sliced
- 500ml beef stock
- 2 tomatoes finely chopped
- 2 tablespoons coarsely chopped coriander plus extra sprigs to garnish
- 1 tablespoon lime juice plus extra wedges to serve if desired
- 4 burrito tortillas warmed
- sour cream to serve

- combine beef strips taco seasoning and garlic in a large snaplock bag seal bag and toss to coat
- heat 1 tbs oil in a large non stick frying pan over medium high heat cook the beef for 1 2 minutes each side or until browned and cooked through remove and set aside on a plate
- add the remaining oil to the pan and cook onion for 1 minute add capsicum and cook stirring for 2 minutes until just softened remove and set aside with beef
- add the stock to the pan stir and simmer for 10 minutes or until stock reduces to 1 4 cup return the beef onion and capsicum to the pan and stir to coat remove from the heat
- combine tomato coriander and lime juice in a small bowl season serve tortillas topped with beef mixture tomato salsa and sour cream garnish with coriander sprigs and lime wedges if desired
