The ingredient of Spring Feta And Lamb Salad
- 400g coles butcher mini lamb leg roast
- 1 tablespoon coles olive oil
- 1 2 coles bakery rustic baguette cut into cubes
- 275g cherry tomatoes
- 50g baby rocket
- 50g mixed lettuce leaves
- 50g feta crumbled
- 1 4 cup extra virgin olive oil
- 1 lemon juice
- 1 clove garlic crushed
- 1 teaspoon brown sugar
The Instruction of spring feta and lamb salad
- preheat oven to 200c or 180c fan season lamb and rub with a little olive oil heat an ovenproof frying pan on high cook lamb for 2 3 mins turning until seared all over transfer to oven and bake for 20 mins for medium rare or until cooked to your liking cover loosely with foil and rest for 15 mins
- scatter bread cubes on a baking tray drizzle with remaining olive oil and season gently toss to coat place tomatoes on another tray bake bread and tomato trays for 12 mins or until bread is crisp and golden and tomatoes are soft
- place rocket lettuce tomato fetta and croutons in a bowl and toss to combine whisk together dressing ingredients slice lamb add to salad with dressing and toss to combine
