- 1 30cm baguette french bread stick
- 125g blue brie cheese like king island brand at room temperature
- 300g small brown onions
- 2 tablespoons olive oil
- 1 garlic clove thinly sliced
- 2 tablespoons pure maple syrup
- 3 teaspoons fresh rosemary leaves
- 2 teaspoons red wine vinegar
- salt to taste

- to make the marmalade halve the onions and cut them into thin wedges place the onions olive oil and garlic in a medium saucepan over low heat cook uncovered stirring occasionally for 25 minutes or until soft
- add the maple syrup and increase heat to medium cook uncovered stirring occasionally for 15 minutes or until very soft
- add the rosemary and cook for a further 5 minutes or until the onions are sticky and brown stir often to avoid the mixture sticking to the base of the pan stir in the vinegar and a pinch of salt remove from heat and set aside for 20 minutes or until cool
- meanwhile preheat oven to 180u00b0c slice the bread stick in half lengthways and then crossways into 4 5cm lengths place the bread pieces on a baking tray and bake in top half of preheated oven for 10 12 minutes or until crisp cool on tray
- to serve spread some blue brie onto each piece of bread and top with some onion marmalade
